Garlicky Zucchini Noodles

Vegan, Gluten Free - Serves 2-4


Ingredients:

4 zucchinis

1 ½ teaspoons dairy free butter

2 T olive oil

2 cloves garlic

1 yellow onion

¼ teaspoon red chili flakes

¼ cup dairy free mozzarella (optional)

¼ tsp. Salt

¼ tsp. Pepper

Directions:

Using a handheld or electric spiralizer, cut the zucchini using the spiralizer so the zucchini is in ribbons. Finely chop the yellow onion and add the olive oil, butter, salt, and pepper. Cook until the onions are soft. Add the zucchini and cook until it is soft (about 10- 15 min). Add the garlic and the chili flakes and cook for 5 more minutes. Serve warm topped with the dairy free cheese (optional).
