Herb Crusted Codfish

Ingredients:

1 cup panko breadcrumbs

1 ½ teaspoon lemon peel seasoning

½ teaspoon dried onion seasoning

⅛ cup fresh parsley

The juice of ½ lemon

¼ cup olive oil

½-¾ pound fresh codfish

Pinch of Salt

¼ teaspoon cracked black pepper

Directions:

In a food processor, blend the panko, lemon peel, dried onion, parsley, salt, black pepper, lemon juice, and 3 tablespoons of the olive oil until the mixture is medium crumbs. Preheat the oven to 400 degrees. Put the fish on a sheet pan lined with foil. Roughly coat the top of the fish with all of the breadcrumb mixture (don’t pack it on too much). Drizzle the remaining olive oil on the coated fish. Bake the fish for 15-20 minutes or until the crust is golden brown and the fish is flaky. About 5-10 minutes before you take the fish out of the oven, set your oven on broil to let the crust get nice and crispy. Serve immediately while hot.
